Introducing our newest addition to the soup line-up, just in time for Mardi Gras: Sausage and Chicken Gumbo! After a request for gumbo from some of our customers, we decided to add to the mix of daily soup offerings and it has been a hit ever since.
A good gumbo starts with an authentic roux. If you do it right, stirring constantly, the roux thickens and develops in about 45 minutes to an hour, with a faint smell of roasted peanuts. We start with prime duck fat, Cajun-style, then add our own blend of creole spices, okra, tomatoes and, of course, our Whole Hog slow-smoked chicken and savory smoked sausage.
