Dry Rub Ribs are Here to Stay

Well, the verdict is in – swift and definitive – the new(ish) dry-rubbed baby back ribs from Whole Hog North are officially more popular than our traditional, glazed ribs. Of course, we personally like them both, but our customers continue to rave about and order the dry-rubbed ribs.

Once again, our esteemed pitmaster, Rozchea Butler, was the mastermind behind the addition to our menu, when he suggested we do a dry-rubbed rib about nine months ago. Luckily, Whole Hog Café North Little Rock owner, Rich Cosgrove, had a recipe for a dry rub that his brother developed for their World Champion barbecue team over 25 years ago. He passed on the recipe to Rozchea, and the rest, as they say...

We now smoke and sell more ribs than ever, including many more racks of the dry-rubbed ribs than ever before. Whole Hog in North Little Rock is currently the only location to offer a true dry-rubbed rib: cured in dry rub and finished with our signature finishing dry rub. Of course, we still offer the original glazed baby backs – your choice. Some customers order a full rack with half glazed and half dry-rubbed. Hey, you pick!
